General Notes:

Grain sat milled, but unused, for two weeks before I brewed this batch.
Tasting Notes:

Tasting notes taken 3/31/2010. Poured from 22oz bomber into a tulip.

Appearance: color is a medium brown hue; body has very little haze but there is some apparent effervescence. Head poured several fingers due to large carbonation and is ivory in color but is dissipating rather quickly. Overall not bad, though I would have liked it to be hazier like a typical wheat beer. Smell: aroma has a little wheat, a little clove and a very little chocolate. There is also a hint of vegetabley hops which does not complement the picture very well. The overall smell is also just a little thin. Not bad, but I could do a lot better. (3)

Taste: flavor has a lot of the banana and clove flavor that a good wheat beer has; I really must try using the Weihenstephaner Weizen yeast again. The mix is sweet up front with a dry aftertaste. There is a pervasive alcohol warmth in the flavor. This style is just not strong enough to stand up to high ABV, so even at 6.6% it comes through way too much. I simply must get a handle on my mash efficiencies. (3)

Mouthfeel: I think I have been so paranoid about getting another non-carbonated batch like #5 that I have been greatly overpriming my bottles. This has the side-effect of mega-carbonated super-creamy beers, an effect about which I shan't complain. This beer is rather highly attenuated, so it doesn't quite have enough body to really make use of the carbonation, but overall it's quite creamy and satisfying. (4)

Drinkability: I'd say this beer is fairly drinkable. The vegetabley hops and the apparent alcohol bring it down a little, but the delightful mouthfeel and somewhat refreshing style help to bring drinkability up. I've no doubt that if this thing turned in at a more reasonable 5-5.5% ABV (my target) and if I pared the hops back a bit, it could be seriously quite good. (3.5)

Overall score 3.25 (C+). As far as improvements, I think the drinkability notes say it all. Lower the hop bill and lower the ABV through a better-controlled mash efficiency and I think I might have a real winner here.
