Recipe: 19 lb Maris Otter 13 AAU (37g @ 9.8% AA) Belma @ 60 Wyeast 1728 - Scottish Ale
General Notes: Used yeast cake from batch #80. Boiled down 12 quarts of first runnings to about 4 quarts to caramelize some of the wort.
Tasting Notes: Tasting notes taken 4 June 2014, 18 days after kegging. Dispensed from kegerator into a tulip. Appearance: medium amber-brown hue with a moderate haze. Head poured a single finger of creamy ivory foam with decent retention. There is a nice lace left on the glass as the head dissipates. Frankly, I poured it pretty aggressively to get the single finger of head, and I would have liked more retention. Still, it's a quite pretty example of the style. (3.75) Smell: sweetly malty with lots of caramel and toffee character. If they made malt candy, this is what it would smell like. (4) Taste: very sweet right up front with plenty of malt character. There's a little heat here, but it's quite smooth for its giant ABV. Bitterness is definitely present, but it's still quite malty. I might even consider backing off on the hops, but really, it's not at all *too* bitter. I think this brew hits the target for which I was shooting. (4) Mouthfeel: syrupy-rich mouthfeel, but I feel like there could be more carbonation in this beer. Note to self: turn up the CO2 while the beers are just sitting there, then maybe turn down for dispensation. (3.75) Drinkability: very drinkable for the ABV. Candy-sweet, but that's pretty much what to expect for the style. I can say that the D&D group seems to enjoy it. (4) Overall score 3.93 (B+). I could probably condition this beer a little better and up its score to a 4. I think, though, I have mostly nailed down my Wee Heavy recipe.
