General Notes: Dry hops and oak added 11 days into fermentation. I brewed this beer to compete with Woody in a head-to-head IPA challenge. The use of wood in the recipe is just fun wordplay.
Tasting Notes: Tasting notes taken 28 March 2014, 4 days after kegging. Dispensed from kegerator into a dimpled mug. I really wanted to taste this one while the dry-hops were still prominent. Appearance: murky light-orange hue with plenty of haze. Head is a finger of frothy ivory foam with attractive lacing left on the glass. If you don't mind cloudy IPAs, this looks pretty nice. (3.75) Smell: definitely oaked and woody with lots of vanilla and crème brûlée character. Hops are green with a berry-like aroma with a little bit of tropical fruits thrown in. This beer was a bit of an experiment, but I'm quite happy with the complexity of the aroma. (4) Taste: the vanilla starts off the flavor, with woodier characteristics developing along the line. An early element of tropical fruits and green hops is nice, but this slowly morphs into a harsher bitter finish with astringency from the wood. The vanilla/crème brûlée thing continues through the flavor, though, which is quite nice, and the complexity is really quite intriguing. (4) Mouthfeel: medium-light body with a good level of carbonation and a good creaminess. Whatever I'm doing here, I'm dialing it in nicely. (4) Drinkability: this is a tasty-enough beer, but its challenging and astringent woody character does impact drinkability (not to mention its relatively-high alcohol, which, to be fair, you don't really notice among all the hops and wood). (3.75) Overall score 3.93 (B+). This was a darn successful experiment, I think, although it's not necessarily the easiest beer to just quaff away. I definitely want to experiment more with oaking my IPAs.
